Methods of Cooking:-
Almost all the methods of cooking are used for preparation of food. Boiling, Poaching, Stewing, Sautéing, Roasting, Baking, Braising and Frying are some common Methods of Cooking which are used frequently.
Use of Cooking Wine:
Coolung More is used as marinade and cooking liquor. These wines bring a delicate and different taste, colour and flavour in the dish. Broadly White and Red wines are used.
The Cooking Medium in most of the cases is White or Yellow Butter and Olive oil. Clarified butter and margarine are also used as supplements.
Use of Sauces:-
The Mother sauces used in French cooking are rich, silky, colourful and full of flavour. They bring moisture, taste, richness and satiety value for the meals. Mother Sauces or their derivatives are used to bring verity in the food. Cream/Wine based nouvelle sauces (chef’s creation) are preferred now a days.
Meats and Offal:
Games, poultry, different meats are used as essential ingredients. Meats are cooked and served as per degree of doneness. They provide proteins to the diet.
Vegetables, Rice and Pasta
Vegetables play a role of side dishes and adds to the colour and contrast. Potato, Rice or Pasta is used as Carbohydrate supplement and they balance the diet.
